Muffins in a Minute

Ready for a great breakfast and brunch recipe?
Here ya go!

Freezer Muffins


3 c. flour
1 T. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
10 Tbsp. unsalted butter, softened (1&1/4 sticks)
1 c. sugar
2 large eggs
1&1/2 c. plain whole milk yogurt

- Whisk or sift together flour baking powder, baking soda and salt.
- In separate bowl beat butter and sugar together until fluffy. Add eggs one at a time. Add yogurt.
- Combine wet and dry ingredients. Add *extras.

To freeze:
- Spray muffin tin with cooking spray. Fill each muffin cup 2/3rds full.
- Wrap tightly in plastic wrap and freeze. Once the raw batter is completely frozen, remove from pan and store in large ziplock bag.

To bake:
- Adjust oven rack to lower middle position.
- Spray muffin tin with cooking spray or line cups with muffin papers.
- Place frozen batter into each cup.
- Bake @ 375* for 35-40 minutes.


*VARIATIONS

Blueberry Muffins: Add 2 c. fresh blueberries (tossed in 1 T. flour) to batter before freezing.
Cranberry-Orange Muffins: Add 1&1/2 c. fresh chopped cranberries and 1 tsp. grated orange zest into batter before freezing.
Lemon-Poppy Seed Muffins: Add 2&1/2 tsp. poppy seed and 1&1/2 grated lemon zest into batter before freezing.

Shut. up. You can do that? I didn't know you could freeze batter. I'd have to use soy yogurt & egg replacer; do you think that would matter?

P.S. Did I tell you we got a chest freezer? I blame you. ;-)

I know the egg replacer will freeze well, but I am not sure about the soy yogurt.

Maybe try a small batch and let us all know!

These look so delish'! Thanks for sharing. Quick question abou the lemon zest...Is it 1 1/2 lemons worth of zest, or 1 1/2 Tbsp or tsp or zest? Thanks for the clarification. I can't wait to make them.

FABULOUS idea! I'm going to a recipe swap tomorrow and if I can get movin here quick enough, I might take these tomorrow!

Two questions:

1) Do you think you could use frozen blue berries? Craisins instead of cranberries?
2) Could you line the muffin tins with the papers before freezing?

1) Do you think you could use frozen blue berries? Yes, but you have to completely thaw and then pat them dry first.

Craisins instead of cranberries? Not sure. Give it a whirl and let us all know.

2) Could you line the muffin tins with the papers before freezing? No, just spray the tins with cooking spray and when they are frozen, pop them out and store in freezer bag. When ready to bake you can line the cups with papers before putting frozen dough in.

first, awesome site, so many neato ideas here! second, you can pretty much use any quick bread recipe for these frozen muffins, cornbread too! i tried with zucchini chedder muffins and also with these low-fat (117 Cals!) apple banana bran muffins. result? awesome! also, have you seen those silicone baking muffin cups? they come all single cup style? anyway, try em out, perfect for when you wanna few muffins but dont wannna bake up a whole dozen... cheers! and thanks!
