Easy Freezy Quesadillas

3 packages (10 count) flour tortillas
1 lb. ground beef
1 packet taco seasoning
1 store bought small rotisserie chicken
lots of shredded Mexican cheese blend
Make this like an assembly line...assembling 5 quesadillas at a time. At the end you'll have 15 quesadillas, 5 of each variety. Genius.
Cheese:
- Pre-heat large skillet or griddle.
- Lay out 5 tortillas.
- Top with 1/2 c. shredded cheddar cheese.
- Top with second flour tortilla and fry in pan, one at a time until golden. Allow to cool.
- place each quesadilla into a gallon size freezer bag, placing a piece of wax paper between each quesadilla.
- Make sure to label outside of freezer bag with date and CHEESE Quesadillas.
Beef:
- Saute ground beef until cooked and add taco seasoning packet.
- Lay out 5 tortillas.
- Top with 1/2 c. shredded cheddar cheese.
- Top cheese with 1/2 c. cooked and seasoned taco meat.
- Top with second flour tortilla and fry in pan, one at a time until golden. Allow to cool.
- place each quesadilla into a gallon size freezer bag, placing a piece of wax paper between each quesadilla.
- Make sure to label outside of freezer bag with date and BEEF Quesadillas.
Chicken:
- Cool rotisserie chicken in refrigerator until cool enough to handle.
- Remove meat and cut into 1/2" cubes.
- Lay out 5 tortillas.
- Top with 1/2 c. shredded cheddar cheese.
- Top cheese with 1/2 c. chopped chicken.
- Top with second flour tortilla and fry in pan, one at a time until golden. Allow to cool.
- place each quesadilla into a gallon size freezer bag, placing a piece of wax paper between each quesadilla. - Make sure to label outside of freezer bag with date and CHICKEN Quesadillas.
To Serve:
-Remove desired quesadilla from freezer and cover in slightly damp paper towel. Microwave on high until heated through, about 1 minute.
- Cut into wedges with a rotary pizza cutter.
- Top with salsa, sour cream and guacamole.
- Serve with Mexican Rice and refried beans.

ReplyDeleteWe eat lots of quesadillas in our home, and despite being "quick" they actually take quite a bit of time since we don't have a griddle. We can only fry up one at a time. The idea of making a big batch and freezing will probably save us a considerable amount of time in the end.
ReplyDeleteQuestion: I notice you're calling for flour tortillas. Have you had any success with corn? We make our own corn tortillas from organic corn soaked in lime and prefer to use those. I would imagine that they'd probably do fine, but might be a little soggier than desired when microwaved. Thoughts?

I would love it if you tried freezing a few next time you make your version and then letting us all know if it works out.
I was wondering if it was possible to freeze quesadillas and now I know! I will be making these tonight and freezing for on-the-go lunch!
ReplyDeleteso i was wondering if i should just assemble the quesadillas and freeze or cook and freeze.....???? if i cook and freeze would i just heat on stove??? is there a problem with just assembling???

ReplyDeleteCook first and then freeze. Then wrap in moist paper towels and microwave for 30 second intervals until done.

ReplyDeleteI want to premake some quesadillas for camping. Do you think this will heat well over a campfire? Pre-cook breakfast quesadillas and wrapping them in foil and reheating over the campfire?
